My first cake

My dear friend, Dorothy, taught me how to bake my first cake. I remember my excitement that day, we went to the market to buy what we needed. When we went to my house, out came my garri stick and a bowl, my lesson started.

The mixing was hard work, kai! But I enjoyed every moment of it. For the oven we used a  pot, some gravel, and empty tins of tomato paste. At the end of the day we made a delicious cake that I was really proud of. It was devoured too quickly, in my opinion.

2 cups flour
1 cup sugar
3/4 cup margarine
4 eggs
1 teaspoons baking powder
1 teaspoon strawberry flavour
1 teaspoon pineapple flavour

Preparing the oven.
Place three empty tin tomato tins in the center of the pot. Arrange  them in such a way that the cake pan can sit flat on them. Pour in the gravel.
Put on low heat.
I could not find empty tin tomato cans so I inverted local cupcake plates to place the cake pan on.

For the cake;

Place sugar and margarine in a bowl and begin to cream. Your creaming should be in one direction, clockwise or anticlockwise. Continue creaming until light in colour and fluffy.

Add eggs one at a time mixing after each addition.

Mix in flour and baking powder. Add the strawberry and pineapple flavour and mix properly.

Turn into a prepared cake pan.

Place in pot and bake for about  40 to 45 minutes, or until a toothpick inserted in the middle comes out clean.

Note; when the cake is on fire, do not open the pot before 30 minutes so that the cake does not sink.
