This is one cake that is sure to bring a smile on the faces of chocolate lovers. It can be made for any occasion. I actually made this for my family for valentine.
2 cups flour
3 large eggs
1 3/4 cups brown sugar
1 cup milk
3/4 cup canola oil
3/4 cup cocoa powder
1 cup boiling water
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoon vanilla
Put the boiling water into cocoa powder and whisk until properly mixed. Set aside to cool.
Grease and flour two ten inch cake pans.
Sieve flour, baking soda and baking powder into the same bowl, whisk.
In a mixing bowl, combine sugar, vegetable oil, eggs, vanilla and milk, mix until properly blended. Add cocoa and flour alternately in three batches; mix well after each addition. Mix until well blended. The batter will be runny.
Pour batter equally into the prepared pans.
Bake for 30 to 35 minutes, or until a wooden toothpick inserted in the middle comes out clean.
Cool in pans for about 10 minutes. Turn onto wire rack and allow to cool completely.
Frost with butter cream.
