Puff puff is a popular finger food eaten in Nigeria. It is one snack I enjoy, and the kids love it too. I believe puff puff should be kept simple, anything too fancy takes away from its unique taste. Here is a simple recipe that is also delicious.
This recipe yields about 45 balls.
2 cups flour
1/2 cup sugar
1/4 tsp salt
2 tsp yeast
2 cups water
Put the flour, sugar, salt and yeast in a bowl. Add water and mix properly until smooth.
Cover and keep in a warm place for about 2 1/2 hours. If using quick rise yeast you don't have to wait so long, it will take about 10 to 12 minutes.
Place the vegetable oil in a deep pot and put over fire. When the oil is hot, spoon batter into oil and fry until golden brown.
