Baked Chicken

There's just something about properly seasoned baked chicken! I bake my chicken more often than I fry because it is healthier. This recipe is simple and uses minimal ingredients. And the result? Delicious chicken!

2 whole chickens, cut to size
6 cloves garlic
3 seasoning cubes
1 tbs dark soy sauce
1 tsp salt
1 tsp mixed spice
4 fresh scotch bonnet
3 fresh lime leaves
Olive oil

Blend or pound garlic, pepper and lime leaves together, set aside.

Place washed chicken pieces in a pot, put crushed seasoning cubes, salt, soy sauce, mixed spice and the blended pepper mix. Use a wooden spatula and incorporate the ingredients properly. Cover for about 6 hours.
Lightly grease a baking tray with olive oil. Place chicken pieces on the tray.
Bake at 160 C for 1hr 10mins or until juices run clear.
