The little man in my life has this thing where he asks for a particular meal everyday for a while. Lately, rice and beans has been his request. He wakes up in the morning and one of the first things he requests for is rice and beans. I don't mind this at all because it is a healthy meal, lots of carbohydrate and protein.
Rice and beans cooked together is delicious, nutritious, and filling. This combination produces a lovely distinct flavour, they go so well together.
1 1/2 cups brown beans
2 cups white rice, washed
3 stock cubes
1 medium onion, cut
1/3 cup vegetable oil
2 habanero pepper, crushed
Salt to taste
Wash the beans and boil until almost completely cooked. Set aside
Put the vegetable oil in a dry pot and place on fire. When the oil is hot, put the pepper and onions and allow to cook for about a minute, add some water ( I added some leftover chicken stock), put in the stock cubes and salt.
Add the rice and beans to the pot when the water starts boiling. Stir properly and check seasoning. If the water does not cover the rice and beans, add some water.
Add a little water at a time until the rice is properly cooked and there is no longer water in the pot.
Remove from heat and serve.
