How to make Catfish Pepper soup

One of the many ways Nigerians eat catfish is by making pepper soup with it. Catfish pepper soup is very popular in Nigeria. Well made catfish pepper soup is always a crowd pleaser.
Catfish is tasty and healthy. It contains Omega-3 and Omega-6 fatty acids, it is low in calories, contains vitamin B-12. Catfish provides our bodies with complete protein. It is recommended that we eat fish at least twice a week for maximum benefits. 

Here's a simple recipe .

1 medium catfish, cut
I clove garlic
I medium onion,
2 stock cubes
2 fresh pepper, habanero or scotch bonnet
1/2 tsp pepper soup spice
A few scent leaves, cut
Salt to taste

Cut half the onion and set aside.

Wash the catfish with warm water and place in a pot. Pound or blend the garlic, pepper and half onion. Put this into the pot with the fish. Add stock cubes, cut onions and a little salt.

Add some water to the pot. 

Place over heat and cook for about 10 minutes. Add pepper soup spice and scent leaves. Cook for a few more minutes, taste for salt, correct seasoning to your taste.
Remove from heat (don't over cook so the fish does not fall apart), let stand for at least 5 minutes before serving.
